DIsh for a Week : Breakfast Cheesy Casserole


in my family owned country style diner is what I have in mind for a career growing up. Every meal is personal and special as the recipes was passed on from generation to generation. We kept it to 5 branches within our hometown just to be able to monitor the quality of food that we serve.

Manning these diners together with my husband takes most of my time aside from raising 2 grown-up kids. But I make it a point to cook dinner for them thrice a week and on Sunday family dinners. I also see to it that I still get to attend school activities and PTA meetings.

Dinner at home is like a party for us as I usually prepare a feast with leftovers to be consumed the entire week. Talking about hitting multiple birds with one stone. So this dinner recipe that I will share happen to be a classic favorite.

INGREDIENTS:

  • 2 small potatoes, diced
  • 4 large eggs
  • 1/4 cup milk
  • 1 teaspoon hot sauce
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 Italian sausage links, casing removed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley leaves

 DIRECTIONS:

  • Preheat oven to 350 degrees F. Lightly coat a 9-inch baking dish with nonstick spray.
  • Place potatoes and 1/4-cup water in a microwave-safe bowl. Cover and place into microwave for 4-5 minutes, or until tender; drain well and set aside.
  • In a large glass bowl, whip together eggs, milk and hot sauce; season with salt and pepper then set aside.
  • Heat olive oil in a large pan over medium high heat. Add Italian sausage and cook until browned for 5 minutes. Make sure to crumble the sausage as it cooks & drain excess fat. Mix in bell peppers and potatoes until tender for 3-4 minutes.
  • Remove from heat. Mix in 1/2-cup cheddar cheese until well combined.
  • Place sausage mixture evenly into the baking dish. Pour egg mixture evenly over the top and add the remaining 1/2-cup cheese.
  • Place into the oven and bake for 35-40 minutes.
  • Garnish with parsley

Serve hot! Enjoy a hearty home cooked meal! Left overs can be reheated for the entire week.
